What!? Microwaved Cranberry Sauce..How easy is that!


Ingredients

  • 1/2 pound fresh cranberries
  • 1 cup white sugar
  • 1/2 cup water

Directions

  1. In a microwave safe bowl, mix together cranberries, sugar and water. Cover the mixture with wax paper and microwave on high power until the cranberries pop (about 7 minutes). Chill before serving.
  2. If you want to create an even deeper taste: Add sliced Apples or Pears and Pecans, a sprinkle of cinnamon, cloves and or ginger. All will be wonderful!

1851 Maple Hill Manor’s Lemon Souffle Pancakes


INGREDIENTS : Serving for 8
· 1 1/2 cups all-purpose flour
· 3 1/2 teaspoons baking powder
· 1 teaspoon salt
· 1 teaspoon cream of tarter
· 1 lemon zested ( grate or zest outer portion of lemon)
· 1 tablespoon white sugar
· 1 1/4 cups milk
· 1 egg
· 3 tablespoons butter, melted
DIRECTIONS
1. In a large bowl, sift together the flour, baking powder,lemon zest, salt and sugar. After sifting, add cream of tarter and lemon zest. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Maple Hill Manor offers up KY Fudge Pie with Bourbon Whipped Cream


Ingredients

  • 1 - 9 inch pre-made pie crust( pre-bake according to directions)
  • 3/4 cup butter or margarine
  • 3 (1-ounce) unsweetened chocolate squares
  • 3 large eggs
  • 1 1/2 cups sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans, toasted and divided
  • Toppings: vanilla ice cream and chocolate syrup

Preparation

Cook butter and chocolate in a small saucepan over low heat, stirring often until melted.

Beat eggs at medium speed with an electric mixer 5 minutes. Gradually add sugar, beating until blended. Gradually add chocolate mixture, flour, and vanilla, beating until blended. Stir in 1/2 cup pecans.

Pour mixture into 9-inch pie plate lined with your pre-baked pie crust.

Bake at 350° for 35 to 40 minutes or until center is firm. While Pie is baking, make your Bourbon Whipped cream:

Ingredients

  • 1 cup whipping cream
  • 2 tablespoons granulated sugar
  • 1 tablespoon bourbon

Preparation

Beat whipping cream and sugar at medium speed with an electric mixer until stiff peaks form; stir in bourbon.


Cool. Top each serving with a dollop of the Bourbon Whipped Cream and drizzle with chocolate syrup; sprinkle with remaining chopped pecans.

Easy and OMG Good Pumpkin Bread


Maple Hill Manor fills with aroma of fresh baked Pumpkin Bread.

Slap on some butter to a warm slice and feel your eyes roll back in your head with the first bite.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups shredded fresh pumpkin
  • 1 cup toasted pumpkin seeds

Directions

Preheat the oven to 325 degrees F.

Sift the flour, cinnamon, baking soda, baking powder, and salt together.

In a separate bowl, mix the sugar, vegetable oil, eggs, and vanilla. Combine both mixtures and fold in the shredded pumpkin and pumpkin seeds. Once the ingredients are all incorporated pour into a non- stick 9 by 5 by 3-inch loaf pan. If your pan is not non- stick coat it with butter and flour. Or make muffins using muffin tins. As long as you can still rub some butter on them. lol

Bake for 1 hour and 15 minutes. At this point a knife inserted into the middle of the loaf should come out clean. Cool for 15 minutes and turn out onto a cooling rack. Cool completely. For muffins temperature should also be 325 degrees F., but bake for 30 minutes.

Old Fashioned Meatloaf


Old Fashioned Meat Loaf

Ingredients
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Rosemary-Scented Chicken Breasts with Caramelized Orange Cranberry Sauce


Rosemary-Scented Chicken Breasts with Caramelized Orange cranberry Sauce

Serves 4

  • Good tasting extra-virgin olive oil
  • 4 boneless and skinless chicken breasts (organic if possible)
  • Salt and freshly ground black pepper
  • 2-inch branch of fresh rosemary
  • 10 to 12 olives (oil cured, Sicilian, or Kalamata)
  • 1 large blood orange, or navel orange, peeled and the flesh cut into small chunks
  • 1/4 cup dried sweet cranberries
  • 2 large garlic cloves, thinly sliced
  • 1/4 to 3/4 cup orange juice
  • 1 tablespoon cold unsalted butter

1. Lightly film a 12-inch straight-sided sauté pan with the olive oil. Heat it over high heat until oil shimmers slightly. Slip the chicken breasts into the pan, sprinkling them with salt and pepper. Lightly brown them on both sides, taking only about 30 seconds per side.

2. Immediately reduce the heat to medium low, add the olives, rosemary, orange pulp,cranberries, garlic and 1/4 cup of the orange juice. Make sure the liquid is barely bubbling.

3. Cover the pan and cook 3 minutes; turn the chicken, check the sauce for burning (add a few tablespoons of orange juice if needed), and cook another 4 minutes, or until the chicken is firm, but not springy, when pressed. Remove the chicken to a serving platter and keep it warm.

4. Make the sauce by adding another 1/4 to 1/3 cup orange juice to the pan and boiling it down to a syrup while you scrape up any brown bits and glaze from the bottom of the pan. A flat sided wooden spatula is invaluable for this. Swirl the butter into the pan just to blend it in. Scrape the caramelized syrup over the chicken and serve hot.

Cooking Tip for Sauces

Finishing simple pan sauces by swirling in a tablespoon or two of cold unsalted butter (remove the pan from the heat first) enriches the sauce, smoothes out any roughness and thickens the sauce slightly. Besides, that small amount of butter gives you incomparable flavor.
