Pineapple Angel Food Bundt Cake

This SUPER EASY DESSERT is adapted from a Pinterest Post.





 Three Ingredients is all you need to make this delicious cake.You can even keep the ingredients on hand for that last minute get together.

1 box of Angel Food Cake Mix
1 can of Crushed Pineapple
1/2 cup of Brown Sugar

Place your bottom oven rack at the lowest level. Preheat oven to 350. Spray Bundt Pan or Baking Dish with cooking oil.Sprinkle the brown sugar all on the bottom of the pan. Mix the Angel Food Cake mix and the Crushed Pineapple with all the juice by hand for about a minute or until it is well blended. Pour into Baking Pan/Dish and place dish on Cookie Sheet Pan. It WILL over flow, so save the clean up. Bake for about 35-45 minutes until toothpick poke comes out clean and the cake has set. Allow to cool for about 15-20 minutes, Flip on serving dish and presto! A Beautiful Dessert....many options to do: Top with fresh strawberries and whip cream, or use mandarin oranges, even peaches...YUM, peaches, that will be my next one!

Lemon Souffle' Pancakes



1851 Maple Hill Manor’s Lemon Souffle Pancakes


INGREDIENTS : Serving for 8
· 1 1/2 cups all-purpose flour
· 3 1/2 teaspoons baking powder
· 1 teaspoon salt
· 1 teaspoon cream of tarter
· 1 lemon zested ( grate or zest outer portion of lemon)
· 1 tablespoon white sugar
· 1 1/4 cups milk
· 1 egg
· 3 tablespoons butter, melted
DIRECTIONS
1. In a large bowl, sift together the flour, baking powder,lemon zest, salt and sugar. After sifting, add cream of tarter and lemon zest. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Saute'd Collard Greens.


Cheap and so fresh! Heat Olive oil in skillet chop up greens saute' for about 10-15 minutes while adding sea salt chopped garlic and a squeeze or two of lemon. Great with Chicken, pork,steak and a side of potato of your choice. YUM! A healthy comfort food for me!

10 minutes to Make an Hour to Bake: Corn Pudding.


Ingredients

  • 5 eggs
  • 1/3 cup butter, melted
  • 1/4 cup white sugar
  • 1/2 cup milk
  • 4 tablespoons cornstarch
  • 1 (15.25 ounce) can whole kernel corn
  • 2 (14.75 ounce) cans cream-style corn

Directions

  1. Preheat oven to 400 Degrees F . Grease a 2 quart casserole dish.
  2. In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
  3. Bake for 1 hour.

What!? Microwaved Cranberry Sauce..How easy is that!


Ingredients

  • 1/2 pound fresh cranberries
  • 1 cup white sugar
  • 1/2 cup water

Directions

  1. In a microwave safe bowl, mix together cranberries, sugar and water. Cover the mixture with wax paper and microwave on high power until the cranberries pop (about 7 minutes). Chill before serving.
  2. If you want to create an even deeper taste: Add sliced Apples or Pears and Pecans, a sprinkle of cinnamon, cloves and or ginger. All will be wonderful!
